HAPPY ST. PATRICK'S DAY




Bread Pudding
6 servings
4 cups day old French or regular bread cubes
16 chocolate sandwich cookies, coarsely broken
2 cups milk
1/2 cup sugar
1/4 cup butter or margarine, melted
2 eggs
1 teaspoon vanilla extract
Frozen yogurt or whipped cream, optional
Mix bread cubes and broken cookies in large bowl, set aside.
Blend milk, sugar, butter, eggs and vanilla, pour over bread mixture, stirring to coat evenly. Pour into greased 1 1/2 quart round casserole.
Bake at 350 degrees for 45 to 50 minutes or until set. Serve warm or at room temperature topped with frozen yogurt or whipped cream.


I wanted to start off with a dessert.  Why didn't I choose a green dessert?  You can add food coloring to whatever you deem appetizing; once you decide "to go green".  I know my hubby likes bread pudding.  I do too; rarely have it, however. I was going through an old email file from 2001.  I had to back up email and ended up never reloading it onto the computer.  I was surprised it will show up in my Mac mail by just opening an email.  Go figure.  I hit pay dirt when I saw I had a whole long list of recipes. If I am not browsing a cookbook, then I will be drawn into a long list for sure.  The recipe I was going to fix today is a key lime pie.  It's our rendition of key lime.  I do make one which is key lime juice, but this is the one & it's so EASY.  Simply purchase a pre-made graham pie crust.  Then  you mix  up a 6 oz. can of Limeade, a whole can of Sweetened Condensed milk and some Cool Whip.  Pour into the pie crust and stick in the refrigerator to set a couple of hours.  I have everything but the Cool Whip.  The filling is smooth and creamy.

We have no set way to celebrate St. Patty's Day.  Never been out to celebrate.  I simply prepare a corned beef, head of cabbage and boiled potatoes.  Easy as well.  I should have tried my hand at making some Irish soda bread this year.  I like cornbread with this meal too.

Today is the annual Winter Park Sidewalk Art Show.  It draws a very big crowd. Maybe tomorrow I will go check it out.  Thought about it today but decided against.  Instead, Anita and I checked out a local neighborhood that was having a garage sale.  Ha!  We did a drive by and never had an ounce of interest to STOP.  Got the children MacDonald's for lunch and they dropped me back home.  Hubby had been busy picking up the yard.  Soon after the yard people arrived.

Speaking of the yard?  We have lantana flowers blooming right outside my office window.  It is leftover from the orange groves.  It grew wild in the grove and I always noticed how the butterflies are drawn to it.  Well, who knew?  It is sold as a butterfly plant; or one which they are attracted.  I got my zoom lens and went out to catch some photos of the multi-colored beauties.



Then there was a quick drive over to catch the sun light shining on this gorgeous tree! Look at the array of YELLOW in this photo.  (below)  Anita called me on her way home from work and said, "wow, you just have to try to get over here and get a photo..."  So, I did.  Thanks, Anita.  It's called a yellow tababuie.  We have one in our yard, as well as a pink one. It stood out because of the reflection on the lake.


It was worth my drive over there.  Had to park my car and cross the road.
